Mr. Monday is an experienced manager and chef over 23 years in the catering industry. He has Diploma in Business Management and Higher Diploma in Business Administration. He also has a certificate in Advanced Catering Craft Practice (CCP-2). He is certified by the Nigerian Institute of Safety Professionals (NISP) in General Health & Safety and Competence Development Training (Level 1, 2 & 3). He is trained and awarded certificates in Food Safety and HACCP level 3 by The Chartered Institute of Environmental Health (CIEH) UK. He is also awarded a Professional Certification by The State University of New York-Global Foodservice Institute (SUNY-GFI) as a Master Certified Foodservice Professional (MCFP).

He held various senior management and chef positions in multinational catering companies including Sodexho Nigeria Ltd, ESS Nigeria Ltd and Whassan Eurest Nigeria Ltd and also Eliezer Workplace Management Ltd before joining Greenfield. 

Monday is an Associate Member of the Nigerian Hotel and Catering Institute (NHCI).  And also a full member of the Institute of Professional Managers and Administrators of Nigeria (IPMA).
